BREAKFAST
Our breakfast every morning is a huge plate of cut up fruit of every kind, color and taste. It is absolute heaven and you do not need one more thing.
You can put in anything you love.
Ours looks like this -->
FRESH FRUIT PLATE
Fresh coconut meat (Click here to see a video on how easy it is to open one of them)
(Save the coconut milk for a smoothie, pour into a glass and save in the fridge, good for a day or two)
Scoop out the white meat and put that on a plate.
Cut up: pineapple, cantaloupe, strawberries, kiwi, raspberries, blueberries, an apple or pear.
It takes literally 7 minutes to cut up all of this and have it on your plate, once you get in the swing of it. Or if you are pressed for time, cut it prior and have it already ready to grab and go in the a.m. It is so worth the extra few minutes to enjoy this beautiful plate of “life” and good nutrition. It is an amazing start to your day. You are setting the tone for the day by giving your body such good stuff. You will be excited to get up in the morning.
Also a favorite is, Smoothies of every kind. So easy, fast, filling and good for you.
We use almond milk for our base, for smoothies
ALMOND MILK/NUT MILK
Soak your nut of choice overnight (almond, hazelnuts, cashews, brazil nuts overnight in a bowl).
2 cup of nuts
Enough water to cover nuts completely in bowl
drain & rinse nuts after soaking
To make the milk:
place nuts in blender with 4 cups of water
blend on high for 15 seconds or until the nuts are chopped into tiny pieces.
VOILA!!!! You now have RAW milk.
Strain mixture through a strainer and you will have about a cup or more of milk, now ready for smoothies. (save the almond mixture for upcoming smoothies)
You can also blend the finished nut milk with the coconut water that makes for a sweeter taste.
SMOOTHIE
Here are a few smoothies we love:
FRUIT BERRY BANANA SMOOTHIE
1 cup of almond milk
1 cup of water
banana
a handful of berries of your choice (strawberry, blueberry or raspberry). One of them or all of them.
2 dates for sweetness or a teaspoon of agave nectar
put all in blender on high for 15 seconds
BANANA SMOOTHIE
1 cup of almond milk
1 cup of water
½ cup of almond mixture (from the almond milk recipe)
2 bananas
2 dates for sweetness
blend for 15 seconds & Serve
PEACH/BANANA/BLUEBERRY SMOOTHIE
1 cup of almond milk
1 cup of water
3 ripe peaches cut up (remove pit)
one banana (cut up)
a handful of blueberries
blend for 15 seconds & serve

Just add a sliced banana or a sliced peach or sliced strawberry and you are GOLDEN!!

APPETIZERS
THE BEST CHUNKY GUACOMOLE
4 large Haas avocadoes nice and ripe, place into a large bowl
½ of a lime squeezed over avocadoes (you can add more to taste)
½ cup of a red onion finely diced
3 ripe plum tomatoes cut into chunks
a dash of cold pressed olive oil
a few cloves of garlic finely chopped
½ cup of cilantro finely chopped (you can add more to taste)
½ teaspoon of sea salt or Himalayan salt
a pinch of pepper or cayenne if you like for a little zing
Mix with a fork all of the ingredients, until you have a beautiful, chunky bowl of guacamole YUM!!!!
Instead of the corn chips you are used to….cut up some veggies and dip into this green magic…or we also love these crackers and put them with everything under the sun “Lydia’s Organics” Ginger nori Crackers. You can get them at some Whole Foods and also order them online. www.lydiasorganics.com. (There are many great flavors). Her whole line of food is AMAZING and I highly suggest putting in an order. These crackers will make you very happy.
MANGO SALSA
3 large mangos peeled
½ jalapeno pepper finely chopped
4 scallions finely chopped
3 tablespoons of cilantro finely chopped
2 tablespoons of lime juice
Cut up the mango into chunks… stir in all the other ingredients and refrigerate.
SOUP
THE MOST AMAZING CREAMY MUSHROOM SOUP
½ Cup of soaked cashews
1 cup of soaked almonds
3 cups of button mushrooms
½ yellow onion chopped
A dash of olive oil
½ cup of nama shoyu (it is in your soy sauce section of your grocery).
4 cloves of garlic
7 cups of water
In a blender, mix the nuts and water to create the base and then add in all the other ingredients until creamy smooth and serve. OUT OF THIS WORLD!!!!
GRAB & GO STUFF
Always have cut up carrots and celery on hand to munch on throughout the day.
I buy RAW almond butter (make sure it is 100% raw) and put that on my celery and it is a great snack with lots of vitamins and protein. Artisana has a great RAW almond butter that they sell at Whole Foods, or you can get online.
Grab a handful of nuts walnut, almonds etc. A great pick me up.
My fav. Grab a banana or an apple. It is amazing how something so simple can be so satisfying. Let’s get back to basics. It is a great mid day snack and GOOD FOR YOU!!!!
JUICES
For morning, noon and night, or a SUPER great pick me up, midday. ANYTIME, ANYTIME, ANYTIME!!!!!!
We have juices all day long. It is the easiest and fastest and most nutritious way to go, to get all that you need in that beautiful bod of yours.
Mid morning we always make a CARROT GINGER juice. Takes 5 minutes.
CREAMY CARROT/GINGER JUICE
10 large carrots
1 knob of fresh ginger (leave skin on root)
juice all and enjoy.
INCREDIBLE!!!!!

1 bunch Kale
3 celery stalks
1 peeled lemon
1 knob of fresh ginger

GREEN, GARLICKY & YUMMY
4 large handfuls of fresh spinach
2 garlic cloves
2 large ripe tomatoes
½ cup of fresh cilantro
juice all & enjoy
APPLE/PARSLEY JUICE UNBELIEVABLE & FRESH!!!!
5 organic red delicious apples
½ cup of organic parsley
juice up and enjoy!!!!!
LUNCH/DINNER IDEAS
Our favorite salads are these two. We eat them several times a week, for lunch or dinner.
CHUNKY, JUICY SPINACH SALAD
This salad is very easy to make and is not only packed with nutrients, but is eye appealing and mouth watering good.
Package of baby spinach leaves
2 or 3 juicy tomatoes
1 cup large button mushrooms
1 handful chopped onions
1 cup chopped broccoli
1 cup chopped cauliflower
1 lemon
1 large ripe avocado
cold pressed extra virgin olive oil
2 level tablespoons raw sesame seeds
2 heaping tablespoons raw flax seed
2 heaping tablespoons raw sunflower seeds
1/3 cup raw crumbled walnuts
Himalayan sea salt
Place spinach leaves into large salad mixing bowl.
Chop tomatoes, broccoli and cauliflower into small bite sizes and mix into salad
Chop onion into small pieces and mix into salad
Pour juice from the lemon into the salad
Add sesame, flax and sunflower seeds and mix
Add olive oil to taste
Add salt to taste
Toss
Add small slices of avocado to top of salad
INCREDIBLE KALE SALAD
2 bunches of kale
3 chopped ripe avocadoes
1 large lemon squeezed
a light sprinkling of cold pressed olive oil
a sprinkle of cayenne
½ a pint of cherry tomatoes cut up
½ red onion cut up
½ cup raw walnuts
pinch of pepper
sprinkling of Sea salt or Himalayan salt
cold pressed extra virgin olive oil
Wash your Kale and then “shuck” the leaves from the hearty stem. Discard the stem and put Kale leaves in a large bowl, proceed in shredding the leaves, with your hands, until they are in small pieces. Add the ripe avocado and mix with the Kale. Use your hands, to insure you are getting the avocado in each nook & cranny of the Kale. Add the lemon, oil, salt pepper, cayenne, cherry tomatoes onion, walnuts and mix lightly. Add olive oil to taste.
Plate and serve. PURE HEAVEN!!!!!! It will become your very favorite too!!!!
EASY BASIL & TOMATO SALAD - A big favorite around our house.
5 medium sized ripe, juicy tomatoes
1 ripe avocado, sliced
½ bunch of fresh basil
½ red onion chopped
¼ cup of pine nuts
drizzling of cold pressed olive oil
pinch of pepper
sprinkling of Sea salt or Himalayan salt
Slice the tomatoes, avocado, onion and basil. Place on the plate in any arrangement you feel. Sprinkle pine nuts, salt & pepper and drizzle the cold pressed olive oil over dish.
SIMPLE SPINACH SALAD
(You can keep it so simple, like we do, or add to it)
Large bowl of fresh spinach (2 large handfuls)
2 large squeezed lemons (avoid seeds)
cold pressed olive oil (just enough to coat the leaves lightly)
sea salt & pepper to taste
Put all in a large bowl, drizzle the cold pressed olive oil and mix and eat!!!!
So simple and so delicious!!!
OTHER GREAT DINNER IDEAS
Note **** (you will need a spiralizer for this dish to make the Angel Hair)
ANGEL HAIR WITH MARINARA SAUCE - INCREDIBLE!!!!

Pasta: 5 pounds of yellow squash
For the “pasta”, cut the top and bottom off of the squash. Slice the squash in half. Put the halves of the squash in spiralizer and make your pasta. Put in bowl and set aside.
MARINARA SAUCE
6 large tomatoes
½ cup sun dried tomatoes
2 garlic cloves
½ bunch fresh basil
¼ cup of loosely packed fresh oregano
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh sage
1 tablespoon fresh pepper
¼ cup red-onion, chopped
½ cup cold pressed olive oil
¼ lemon juice
5 dates, pitted
1 tablespoon sea salt
TOPPING
¼ cup olives, chopped
¼ cup tomatoes, chopped
¼ cup red bell peppers, chopped
¼ cup red onions, chopped
Put all the ingredients in the blender and puree until creamy. Pour sauce over spiralized yellow squash pasta and top with olives, tomatoes, bell peppers and onions, then put the parmesan cheese on top. VOILA’!!!!!!! ENJOY!!!
AMAZING TRICK: PARMESAN CHEESE
You need a coffee grinder. Put a handful of raw sesame seeds and a dash of sea salt in the grinder. Blend until flaky, like the consistency of ground parmesan.
SPAGHETTI al PESTO - This is THE BEST PESTO I have ever tasted in my life!!!!

3 pounds of summer squash
Use the spiralizer to make your pasta. Set aside.
PESTO SAUCE
1 cup pine nuts
1 cup of cold pressed olive oil
½ large bunch fresh basil
½ cup chopped parsley
3 garlic cloves
1 teaspoon sea salt
Put all in the blender and blend until creamy. Gently toss the pesto sauce with your spiralized squash. HEAVEN.
DESSERTS
This is my very favorite dessert, and or breakfast TREAT. However you want to enjoy it. (Plan ahead, it has to be refrigerated overnight before eating.) You cannot eat just one.
CINNAMON ROLLS
(I found these on the internet)
1 ¼ cup almond meal (ground almonds in coffee grinder)
1 ¼ cup ground flaxseed
1 dash cayenne pepper
1 ½ tablespoon cinnamon
1 pinch sea salt
1 cup soft pitted dates
¼ cup water
1 teaspoon vanilla
1/8 cup of cold pressed olive oil
1/8 cup of agave nectar
a heaping ¼ cup of raisins
¼ chopped nuts
PREPERATION:
Combine the almond meal, ground flaxseed, cayenne, ½ tsp. cinnamon, salt in a bowl and set aside.
Ina blender or food processor, process dates, water and vanilla into a paste. Remove half of the date paste and add to the dry ingredients, along with olive oil and agave. Mix these ingredients with your hands until it forms a dough. You may need to add a little water if it is too dry, but be careful not to add to much.
Dust some flour on a cutting board and roll out the dough. Flatten and shape into a ¼ inch thick square.
Add raisins, and 1 Tablespoon cinnamon to the rest of the date paste left in your food processor or blender. Process until smooth. Then spread a thin layer of the paste onto the dough square, making sure to cover the whole surface, and top with a sprinkle of extra raisins and the chopped walnuts.
Carefully and tightly roll the square into a log. Wrap with plastic wrap and put in fridge overnight. When ready to eat, slice in 1 inch rounds and serve with the creamy cashew icing. DELICIOUS!!!!!
RAW CASHEW-COCONUT ICING FOR THE ROLLS
(You will have to play around with the measurements for your own favorite consistency.)
1-2 cups of raw soaked cashews
1-2 cups coconut milk
10-12 dates, soaked, if not very soft
1tsp.vanilla
2 Tbsp. Agave nectar
pinch of salt
Put the cashews into a food processor and process until very fine. Add the rest of the ingredients and process until very smooth. YUM!!!
BROWNIE BALLS
2 cups of chopped dates
½ cup carob powder
½ cup cacao powder
2 cups of ground Brazil nuts
½ cup raw almond butter
1 cup of almond milk
½ cup grated fresh coconut for garnishing
Cacao nibs for garnishing
Put all in a bowl and mix with hands, make sure all ingredients is holding together, you can add water if you need to moisten up the mixture… make small balls, by rolling in hands. Roll the balls with coconut & cacao nibs for an outside coating. Place on a plate and cover with plastic. Refrigerate and enjoy in about 8 hours!!!! They are crazy good!!!!
